I don't find anywhere how to restore a backup.
For example,
- I create the archive for DMS folder.
- I delete one of the folders with files.
- I want to restore this files.
What should I do?

I have successfully restored from backup. There are two parts to my backup: content directory and database. To capture the content directory, I create an archive (tar ball, zip, whatever) of the entire content directory. This is done from shell prompt on the server, or by using FTP to transfer files from hosted server to local machine, and then archive. To back up database, since I use MySQL, I use MySqlAdmin to dump the entire thing to a sql file. Along with these, I also keep a backup copy of the LetoDMS install files.

To restore, or to create a replica, (1) install LetoDMS and configure the appropriate SQL and content directories, (2) create the database and then install the SQL into it, and (3) explode the file archive into the designated content directory.
