When new documents are added and pending for review and approval, only the newest of them is shown in the My Documents page of the reviewer (for both parts Review and Approval), when the document is reviewed, the other pending documents won't show in the list.

Looks like a bug. If you feel comfortable to edit php code try to remove
the 'LIMIT 1' in line 661 and line 682 of LetoDMS_Core/Core/inc.ClassUser.php.
You can actually search for 'LIMIT 1' and remove it in all four cases.
I'm not fully sure if this has side effects. Would be great if you report any problems.
